I cooked on this morning the other day with Eamonn and Ruth. They were a delicious couple and I’ll look forward to working with them again on April 30th.
I made a heart healthy shepherds pie. Tuck in for the ultimate in comfort food.
Serves 4-5
Ingredients
600g white, floury potatoes, peeled and diced
600g sweet potatoes, peeled and diced
Freshly ground black pepper
3 tbs semi-skimmed milk
400g extra lean lamb mince, beef mince or turkey mince
1 medium onion, peeled and chopped
1 celery stick, chopped
2 garlic cloves, peeled and crushed or chopped
2 tsp plain flour
450g canned chopped tomatoes
300ml vegetable stock
1 slug of Worcestershire sauce
2 bay leaves
Handful of fresh rosemary, leaves picked and chopped
Handful of fresh oregano, chopped, or a good sprinkling of dried herbs if fresh not available
I tbs mango chutney (optional)
Method
1. Boil the potatoes and sweet potatoes for 15-20 minutes, or until tender.
2. Drain the potatoes, then mash with the milk using an electric whisk until smooth. Season with pepper.
3. In a large pan over a medium heat, dry fry the minced meat until browned. Drain off any excess fat, then add the onion, celery and garlic and fry for a further 3-4 minutes, stirring occasionally.
4. Add the canned tomatoes, vegetable stock, Worcestershire sauce, herbs and mango chutney (optional). Bring to the boil, stirring until thickened. Reduce the heat, then cover and simmer for 20 minutes, stirring occasionally.
5. Place the meat in an ovenproof dish. Spoon the mashed potato mixture over the top and texture the top with a fork.
6. Either grill (broil) until lightly browned, or pop into a preheated oven at 200c / 400F / gas mark 6 for 20.



Hello Sally Bee, Where do we start, my wife Cheryl read an article about you in a Sunday paper some months ago. This inspired her to buy your book, although we were already on the healthier side of things, I think she believed our (and particularly mine),diets could be improved further. She has offered me various healthy eating plans over the years, with little effect or positive response from myself. I am a fifty year old six foot three bloke who likes his food!, so she has been up against it… Then, along into our kitchen comes \’The Secret Ingredient\’, and it is amazing! I must admit to the usual sceptisism before the first recipe was prepared, eating it was a major turning point. To the extent that if we now have to eat a non Sally Bee meal, it somehow seems a let-down! We have used the recipes at several dinner parties and have been amazed at the responses from friends and family members. Some of them have gone on to buy the book for themselves and are over the moon with what they are able to produce. I think you have cracked it on several fronts for me. Healthy food always seemed to consist of some brown things, scattered with more brown things, not really surprising it never really caught on. Your recipes are an absolute delight, even during the cooking and preperation stage the sights and smells are amazing. We have fully Sally Beed our store cupboard, this makes shopping and prepping the recipes very easy. The recipes are also amazingly simple to produce, you help make us look much better cooks than we really are, some of our friends even think I can cook! Your story so far is amazing, and we wish you well going forward, you have done and achieved something that will illuminate a lot of lives for years to come.
