A delicious chicken curry the healthy way with maximum taste.
Serves 4

Ingredients
2 tablespoons olive oil
3 onions, peeled and thinly sliced
2 green peppers, washed and sliced
2 garlic cloves, peeled and crushed
1 tablespoon grated ginger
1 red chilli, de-seeded and finely chopped
4 skinless chicken breast portions, cut into chunks
300ml/10 fl oz unsweetened apple juice (plus a little extra if needed)
2 tablespoons tomato puree

Either
1 teaspoon ground cumin
1 teaspoon ground turmeric
½ teaspoon cayenne pepper
½ teaspoon nutmeg
½ teaspoon cinnamon
6 cloves

Or
2 tablespoons ready mixed Garam Masala
1 teaspoon curry powder

To garnish
Chopped fresh coriander
Sliced spring onions.

Method

1. In a large lidded, non-stick pan, heat the oil over a medium heat and brown the onions for about 5 minutes.

2. Next add the garlic, ginger, chopped chilli’s and green peppers and all of the spices and cook for a further 5-7 minutes.

3. Now add the chicken pieces, turn up the heat and fry all the ingredients together for about 5 minutes.

4. Finally add the apple juice and tomato puree, turn the heat down and simmer, with the lid on, for about 20 minutes, checking that the chicken is cooked through.
Serve with some sprigs of coriander and sliced spring onions on top with a serving of brown rice with some lime wedges on the side.
