Tuna makes a healthy alternative to red meat but is still a ‘meaty fish’. This is a really quick and easy dish to make. I use a medium sized tuna steak per person, and you can add any veggies you fancy onto the kebab.
For the Potato salad, buy jersey royals or try ‘Anya’ potatoes if you shop in Sainsburys, they have a lovely nutty flavour.
For the endemane beans and cherry tomatoes, I simpy placed them all in the small roasting dish and drizzled with olive oil, balsamic vinegar, lemon juice, black pepper, fresh rosemary (I also love this with some chopped lemon thyme) and popped it into the oven at about 180 C for 30-40 mins. Then drizzle a little more lemon juice over when serving to give extra zing! As I said in the video, I often eat a dish of this for lunch with a lovely big slice of wholegrain nutty bread to mop up the juices. YUM.
