A light and tasty lunch or starter. Yum. This is the quickest salad to make. EitherĀ  serve it for a light lunch or an enticing starter.

Ingredients

Serves 2 as a meal or 4 as a starter.

5/6 slices of proscuitto ham

1 tin of peaches in juice (not syrup!!)

1 packet of dark green salad leaves (watercress, rocket etc)

For the dressing:

2 tablespoons Olive oil

2 tablespoons Balsamic vinegar

Juice of 1 lemon

1 teaspoon dark brown sugar

  • Cut the proscuitto ham into smaller pieces and fry in a shallow frying pan for 3-4 minutes until nice and crispy.
  • Chop the peaches up into bite size chunks and add both the ham and the peaches to the salad leaves in a colourful big bowl.
  • Mix all the dressing ingredients together and pour over the salad. Serve immediately.

        One of my most favorite salads. My Italian friends always mix fruit into salads and love tucking into them when they make them for me when I visit. They also grill the peaches and leave the proscuitto cold which is another option. Love the book too, mine has just arrived- chilli con healthy looks fab! Thanks Sally for bringing us nutritious, healthy family food without the faf!
