Berry Muffin Cups

Ingredients:
  • 3tbsp wholemeal flour
  • 1tbsp chopped walnuts
  • 2tsp poppy seeds
  • ½tsp baking powder
  • 1 large egg
  • 1 medium ripe banana, mashed
  • 1tsp runny honey
  • 80g blueberries or raspberries (or a mixture of both), fresh or frozen
  • 4tbsp low-fat natural yogurt, to serve
Method:

This gorgeous breakfast pot is sweetened with banana and honey, crunchy from the walnuts and poppy seeds and bursting with juicy blueberries. Divine.

Serves 2

  1. In a bowl, combine the flour, walnuts, poppy seeds and baking powder. Add the egg and beat in with a fork. Stir in the mashed banana and honey.

  2. Spoon into 2 microwave proof cups. Put the berries on top and microwave each for 1 min 30 sec on high. If a skewer inserted into the centre comes out wet, microwave for another 30 sec.

  3. Leave to cool for 5 min, then serve with yogurt on the side.
