- 3tbsp wholemeal flour
- 1tbsp chopped walnuts
- 2tsp poppy seeds
- ½tsp baking powder
- 1 large egg
- 1 medium ripe banana, mashed
- 1tsp runny honey
- 80g blueberries or raspberries (or a mixture of both), fresh or frozen
- 4tbsp low-fat natural yogurt, to serve
This gorgeous breakfast pot is sweetened with banana and honey, crunchy from the walnuts and poppy seeds and bursting with juicy blueberries. Divine.
In a bowl, combine the flour, walnuts, poppy seeds and baking powder. Add the egg and beat in with a fork. Stir in the mashed banana and honey.
Spoon into 2 microwave proof cups. Put the berries on top and microwave each for 1 min 30 sec on high. If a skewer inserted into the centre comes out wet, microwave for another 30 sec.
Leave to cool for 5 min, then serve with yogurt on the side.
