Creamy Broccoli Soup


250g broccoli (mainly stalks), chopped

1 small leek, sliced
1 clove garlic, sliced
250ml water

8 whole cashew nuts, soaked for 1 hour in water, then drained.
Sprinkle of LoSalt
Freshly ground black pepper

To serve
Drizzle of olive oil
Sprinkle of seeds; sesame, pumpkin, pine


This soup is lovely in summer time, it has a really fresh flavour and it’s great for using up broccoli stalks that you usually throw away! (I hate waste!)

Serves 2

  1. This is the easiest, healthiest soup to make. Use the stalks of the broccoli first, them make the weight up with the florets. You can then save the remaining florets for another meal.
  2. Simmer the broccoli, leek and sliced garlic in water for 5-6 minutes until the vegetables are a lovely bright green colour.
  3. Next blend this with the soaked cashew nuts and a sprinkle of LoSalt and black pepper.
  4. Serve with a drizzle of olive oil and a handful of seeds.
