Egg Piperade

This is a tradition French made with eggs and peppers that makes a delicious, high protein breakfast

Ingredients:

1 onion, finely sliced

1 tablespoon extra virgin olive oil

1 red pepper, diced

1 yellow pepper, diced

2 large ripe tomatoes

½ small fresh chilli, de-seeded and sliced or sprinkle chilli flakes

1 clove garlic, peeled and crushed

1 bay leaf

2 sprigs thyme

3 eggs, beaten.

YOU CAN USE FROZEN VEGGIES AND GARLIC TO SAVE TIME

 

 

Method:
  1. Heat the olive oil in a large non-stick frying pan and sauté the sliced onion for 3-4 minutes until starting to soften.
  2. Add the chopped peppers, and cook over a medium heat for 10 minutes.
  3. Now add the tomatoes, garlic, chilli and herbs, and continue to cook until everything is soft and working well together.
  4. Now add the beaten eggs to the mixture and cook exactly as you would with scrambled eggs, keeping it moving until the eggs start to firm up, then remove from the heat and serve.
