Immune Boosting Soup

100% natural ingredients that will help to support your immune system

Ingredients:

Drizzle olive oil

1 small red onion, finely diced

1 small white onion, finely diced

2 sticks celery, diced

1 large carrot, diced

1 clove garlic, chopped

½ red chilli, deseeded, chopped

2 cm piece ginger, peeled and chopped

Approx 14 sweet cherry tomatoes

400g tin chopped tomatoes

Freshly ground black pepper

Pinch LoSalt

400ml boiling water

Method:

 

  • Using a large, non-stick, lidded pan, sauté the chopped vegetables, garlic, ginger and chilli for 10 mins in a drizzle of olive oil.
  • Season with freshly ground black pepper and a pinch of LoSalt
  • Next add the whole cherry tomatoes
  • Season with freshly ground black pepper and a pinch of LoSalt
  • Now add tinned chopped tomatoes and 400ml boiling water.
  • Pop the lid on and simmer for 15mins or until the diced carrots are cooked.
  • Finally add some ripped fresh basil, stir and serve, healthy, chunky and hot!
