1 red onion, finely sliced
1 leek, finely sliced
1 egg, whisked
large handful of beansprouts
1 tsp of ginger, grated
1 garlic clove, grated
splash of sesame oil
low salt soy sauce
1 tablespoon fish sauce
300g rice noodles
Handful cooked chicken or cooked prawns (optional)
1 fresh red chilli (sliced)
2 tablespoons crushed peanuts
2 spring onions finely sliced
pinch of dried chilli flakes,
Serve veggie, or with chicken/prawns
Start by cooking the rice noodles in pan of boiling water following the packet instructions.
Next place all the raw ingredients in a hot wok with a splash of sesame oil, toss and cook for 2-3 mins.
If adding chicken or prawns, add them now and cook for another 3-4 mins.
Now add the whisked egg and drained cooked noodles, tossing ingredients quickly while adding the soy sauce and fish sauce.
Finally divide between 2 large bowls and top with the garnish ingredients and serve.
