About the Recipe

Ingredients

50g hazelnuts, chopped

50g sunflower seeds, chopped

50g dried apricots, chopped

50g raisins

50g oats

50g granary brown flour

½ tsp baking powder

2 tbsp vegetable oil

4 tbsp apple juice

Preparation

Ideally a breakfast snack needs to be balanced and filling, low in sugar, high in fibre and slow release carbohydrates. By the very nature of snacking, it needs to be easily portable and long lasting.


My Energy Bites tick all the boxes. I make a batch once a week as this recipe makes between 20 and 30 depending in the size, they keep for a week in an airtight container and don’t crumble all over your lap in the car!


Mix all the ingredients together and form into small balls. Bake at 180˚C for 15-18 minutes until golden brown
