I know some of you have kids that have just flown the nest to begin their adventures at Uni. If they are missing your cooking already!? point them in the direction of Lauren!

Lauren is a full time student and runs ‘The Starving Student’ giving easy and affordable recipe ideas to other students. She’s a fabulous foodie and her dishes are delicious!

Lauren has picked out a couple of her favourite dishes for me to share with you – do feel free to pass this post onto anyone who could do with Laurens help!

Salmon Traybake

Makes 2 Portions
Takes 30 Mins

You need…
2 Salmon Fillets
Half a Pack Green Beans
1 Garlic Clove, crushed
Salt & Pepper
1 Red Onion
1 Large Potato
8 Cherry Tomatoes
3 tbsp Teriyaki Sauce
Oil (for drizzling)


  • Preheat oven to 200°C. Chop ends off the green beans. Chop onion into sixths. Chop potato into 2x2cm chunks.
  • Line a baking tray with foil. Add garlic & potatoes, drizzle with oil, season with salt & pepper. Toss until all covered. Bake for 10mins.
  • Add other vegetables, salmon and teriyaki sauce. Drizzle lightly with oil and toss.
  • Bake for 12-15 mins until salmon is cooked. ENJOY!

Bacon Brunch Muffins

Serves 1

You need…
1 Muffin (or any type of bread you have in your cupboard)
2 Eggs
2 Rashers of Bacon
Salt & Pepper
1 Red Onion
Butter (for frying and spreading)


  • Slice the red onion.
  • On LOW heat, start to fry the onion in half a tsp of butter.
  • After 3 mins, add the bacon to the pan. Fry on LOW-MEDIUM heat for another 3-4 mins.
  • Whilst the bacon cooks, crack the eggs into a small pan of boiling water. Poach for 3-4 mins on LOW heat until the white is firm (adding 2 tbsp of red or white wine vinegar to the water helps the eggs hold their shape).
  • Toast the muffin. Spread with butter if desired.
  • Plate up! On the muffins, add the bacon, onion and top with the poached eggs. Sprinkle with salt & pepper… ENJOY!
